Extra olive oil

In our land we grow also olive trees from which we obtain one of the best olive oil of the area. Our oil is made with three different kinds of olives: "moraiolo", "correggiolo" and "leccini", that we pick, all by hand, generally from the beginning of the month of November.
The olives are daily pressed at very low temperatures for keeping all fresh flavours and fruit tastes. The new olive oil is kept in stainless steel tanks or "terracotta" jars for some week and then it is bottled. Our olive oil is not filtered.
Our oil should be used together with some of the best tuscan dishes: "bruschetta" or "ribollita", for example.
